What’s Inside This Healthy Ground Beef Quesadilla

Here’s what’s inside this delicious beef quesadilla:

  • Ground beef or use whatever minced meat you have available.
  • Herbs and spices, and a lot of them. We added cumin, black pepper, garlic, crushed red pepper, basil, coriander. Feel free to experiment and to add your own spice.
  • Vegetables! Use whatever is in season. I made this during summer, so mine is full of zucchini, bell peppers, some chopped parsley and arugula and scallions. I also added some thinly chopped cauliflower, you couldn’t even taste it.
  • Cheese! I used mozzarella, but feel free to use whatever you have or like!

The process is pretty simple:

  • Cook the ground beef with the herbs and spices, then add in the vegetables and stir for 3-4 minutes. Reduce the heat and let this cook for about 5 minutes. Then stir in some tomato paste and add lemon juice. Stop heat and sprinkle some fresh greens all over the ground beef.
  • Spread this ground beef mixture over 1/2 of a tortilla, top with some cheese and fold the tortilla in 1/2.
  • Toast the tortilla on both sides on a nonstick pan or a griddle and serve immediately.

  • load up on vegetables! Vegetables are nutrient dense and low in calories, which is perfect if you’re wanting to keep a healthy diet. Incorporate things like thinly chopped herbs and greens, bell peppers, zucchini, sneak in some cauliflower rice – this will add more flavor and make the quesadilla healthier.
  • add cheese in moderation. You do not want to overdo it with cheese, a little bit goes a long way!
  • use whole food tortillas. Whether you’re gluten-free, keto or don’t follow a certain diet – go for the whole food option. For example wholegrain instead of refined flour tortillas are the better option here.

Ingredients

  • 7oz / 200g ground beef
  • 1 tsp basil
  • 1 tsp coriander
  • 1 tsp black pepper
  • 1 tbsp chili flakes
  • 1 tsp cumin
  • 3 garlic cloves
  • squeeze of lemon (1/2 lemon)
  • 1 scallion, chopped
  • 2 small bell peppers, chopped
  • 1 carrot, chopped
  • 1 cup zucchini, cubes
  • 1 cup thinly chopped cauliflower
  • ½ cup greens (arugula and parsley)
  • ½ cup mozzarella
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 3 wholegrain tortillas

Instructions

  1. Cook the ground beef with the dried herbs and spices in a nonstick pan and olive oil for 2 minutes.
  2. Add in the zucchini, scallions, carrot, cauliflower, garlic and bell peppers. Stir for 3-4 minutes. Reduce the heat and let cook for about 5 minutes, stirring occasionally.
  3. Stir in some tomato paste and add the lemon juice. Stop heat and sprinkle some fresh greens over the skillet.
  4. Spread this ground beef mixture over 1/2 of a tortilla, add some cheese on top and fold the tortilla in 1/2.
